Ingredients:
For The Graham Crackers:
211 grams All Purpose Flour
130 grams Whole Wheat Flour
1/2 Cup Wheat Germ
1/2 teaspoon Salt
1 teaspoon Baking Soda
225 grams Butter, Softened
1 teaspoon Cinnamon
30 grams Honey
100 grams Light Brown Sugar
For The Ice Cream:
1 1/2 Cups Heavy Cream
1/2 Cup Whole Milk
1/2 Cup Granulated Sugar
4 Each Egg Yolks
1 teaspoon Vanilla Extract
Method of Preparation:
To Make The Graham Cracker Crumbles:
1. Preheat oven to 350 Degrees F
2. In a large bowl, mix together the flours, wheat germ, salt, and baking soda
3. Using a mixer, cream together butter, cinnamon, honey, and brown sugar
4. Once the sugar is fully incorporated into the butter, combine with the flour
5. Using your hands, crumble the butter mixture into the flour
(as if making steusel or biscuits)
6. The mixture should resemble coarse streusel topping
7. Place the mixture on a sheet tray and bake 6 minutes
8. Using a large spoon, mix the graham cracker crumbles
9. Bake 10 minutes more, turning again halfway through
10. Remove from oven and allow to cool completely.
To Make The Ice Cream:
1. Place the cream, milk, and sugar into a medium pot and bring to boil
2. Temper in the egg yolks and cook to anglaise consistency
3. Remove from heat and cool completely
4. Stir in the vanilla extract and 1/2 of the graham cracker crumbles
5. Freeze ice cream according to the directions on your ice cream machine
